If my memory of "Go With Noakes" is correct, the Cornish Pastie was originally not a mere snack, but rather a full and nourishing meal for the tin miners to eat while they were down the shaft, undoubtedly sharing it with the faithful pit ponies that never saw the light of day except when they retired. At one end of the pastie was a delicious savoury filling, while the other end harboured an irresistable dollop of strawberry jam. So that the miners didn't make the mistake of eating their pud first, their wives put a pastry letter on each end for identification purposes. Seeing as it was a letter made of pastry, the miners could tell which end to bite into first even if their miners' lamp had gone out due to a sudden gust of subterranean wind.
